Ingredients balls (about 12):
- Brown rice, 200 g
- Parsley, 1 handful
- Leek, 1 handful of mince
- Brussels sprouts, 6
- Garlic, 3 cloves
- Bread crumbs, to taste
- Salt, Pepper and Oil Evo, to taste
- Garlic and chives powder, to taste
Pumpkin cream ingredients (2 – 3 people):
- Pumpkin, 400 g
- Potatoes, 2 small
- Garlic, 1 clove
- White onion, 1 small
- Oil and salt, q.b.
- Curcuma, q.b.
DIRECTIONS:
Let’s start. In a saucepan cook the brown rice (generally it takes 45 minutes). Meanwhile in a separate pan heat a little oil and let’s add flavor the garlic and leek minced for a few minutes. Then add the chopped parsley and the Brussels sprouts cut into small pieces.
5 minutes before cooking ends, pour the rice into the pan, add salt, pepper and cook together with the sauce for another 5 minutes. (B. This step is important to flavor rice).
Let it cool and then whisk with the immersion blender. Form balls with breadcrumbs (added to taste) and put them in the fridge for about 1 hour.
In another pot, prepare the pumpkin cream. Pour a little oil and let the chopped onion and garlic flavor for a few minutes. Then add potatoes, pumpkin, a sprinkling of turmeric and another 2 tablespoons of oil together with half a cup of water. Cook for about 20 minutes until the mixture is soft enough to be crushed with the immersion blender. (Add other water if the mixture is too dry).
Then, whisk until the whole mixture becomes a homogeneous or almost dough.
Now, heat a non-stick pan with a drizzle of oil and cook the veggy balls (they can also be cooked in a preheated oven for 30 minutes at 180 ° C).
Finally serve the veggy balls with pumpkin cream and a salad mix to give a touch of color!
