Hello guys! Today I propose a new recipe: Pancakes with berries, granola and maple syrup. This type of dessert comes from the American / Canadian tradition and is used especially for breakfasts.
The traditional recipe includes the use of eggs, flour, sugar, vanilla, milk, butter and salt … but of course we reproduce it in a vegan version, with healthy ingredients and without diminishing the goodness of the dessert! Believe me 😉
Let’s first look at the ingredients, then, as always, let’s move on to the procedure!
Ingredients for pumcakes:
- 2 Crushed bananas
- 6 tablespoons of Maple syrup
- 1 cup and a half of Wholemeal oatmeal
- 2 tablespoons of Bitter cocoa
- 2 teaspoons of Essence of vanilla
- ½ cup of Rice milk
- A pinch of salt
Ingredients for the garnish (to taste):
I used a chocolate mousse that I prepared before and then concurrently some of ingredients that I propose below …

- No stick pan
- Whisk by hand
- Immersion blender

TOOLS ~ For this type of cake, are necessary:
- 2 bowls
- No stick pan
- Whisk by hand
- Immersion blender
PREPARATION TIME ~ 5 min (dough preparation) + 20/25 min for cooking!

DIRECTIONS:
Pancakes: Pour all the dry ingredients into a bowl and mix with a hand whisk. In a separate bowl mix the crushed bananas, the essence of vanilla, maple syrup and rice milk. Than combine the two compounds. To avoid the formation of lumps, use an immersion blender. Now heat a non-stick pan. When it is sufficiently hot, pour a spoon and a half of the mixture in the center, spread it to create a layer of just over 3-5 mm and let it cook (usually enough 2 minutes and about 30 seconds when you turn the other side).
The seal. You are free to fill the pancakes at your convenience; I made them like this: a layer of pancakes and one of mousse, one of pancakes and one more of musse. On the surface I added blackberries and blueberries, muesli and chocolate chips …
