I personally recommend this recipe more for an afternoon snack than for breakfast. Maybe eating the Pan dulce rolls together with a good cup of barley, or maybe even with a cup of vegetable drink (for example oat milk, that I love).
In order to make these rolls it is necessary, however, to have in place 250 grams of sourdough at least. This one in fact is the most important ingredient of this recipe. If you do not have it you can generate it with flour, water and sugar in a week or ten days.
Or maybe if you have neighbors who usually make bread at home (like me before I move to work in another city) you can ask them if they are willing to give you a part of their mixture.
Now let’s move to the ingredients and then to the recipe!

INGREDIENTS
Mixture:
- Sourdough, 250 gr
- Wholemeal flour, 150 gr
- Rice milk, 300 gr
- Cane sugar, 80 gr
- Vanilla essence, 1 tsp
- Apple puree
- A pinch of salt
Filling ingredients:
- Raisins, a couple of handfuls
- Ground almonds, a couple of handfuls
- Goji berries, a handful

KITCHEN TOOLS ~ For these Pan dulce rolls, you need:
- Baking dish
- Greaseproof paper
- Rolling pin to roll out the dough
- Bowl to mix the ingredients
PREPARATION TIME ~ 15 min for preparation + 6 hours for rising + 30 min for baking
~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~
DIRECTIONS:
First heat the rice milk for a few seconds at low flame (the temperature should not exceed that of our body ~ about 37 ° C). Pour the warmed milk into the bowl of the sourdough and mix with a fork.
Once the yeast is completely dissolved in the milk, add … a pinch of salt, brown sugar, vanilla and apple puree, stirring constantly.
Finally add the flour. Mix everything until a smooth and non-sticky dough is obtained.
Then spread the dough on the work table helping us by pouring a little of flour on the table itself. Try to obtain a thickness of half an inch.
Pour the filling ingredients onto the flat dough (raisins, ground almonds and Goji berries). Cut strips of about 4 cm and wrap them to obtain rolls.
Then place them on a baking dish lined with parchment paper and let them rise for about 6 hours at about 22 °C ~ 24 °C.
After 6 hours, preheat the oven to 450 K (~ 180°C) and once the temperature is reached, let’s bake it for about 30 minutes.
